Wild Rice Salad with Spiced Pepitas, Cranberries & Apple-Cider Vinaigrette (Serves: 4)

Ingredients

  • 453g Wild Rice, prepared in chicken stock
  • chicken stock, as needed
  • ½ c. pine nuts, toasted
  • 1 bunch scallions
  • 2 carrots, julienned
  • 85g apple cider vinegar
  • 85g vegetable oil
  • 85g sun-dried cranberries
  • 113g spiced pepitas (pumpkin seeds), toasted in oil with salt, paprika and chili powder
  • salt and pepper, to taste
  • watercress, for garnish

Recipe

  • Prepare Wild Rice according to package directions using chicken stock instead of water. Cool rice.
  • Once rice has cooled, add remaining ingredients
  • Serve at room temperature or chilled.
