Jade Blend Caribbean Rice (Serves: 4)

Ingredients

  • 250g Jade Blend
  • 2 c. grilled pineapple (about 2 medium pineapples)
  • ½ c. jicama, peeled and thin julienne cut
  • ½ c. fresh chopped cilantro

Recipe

  • Cook Jade Blend according to package directions.
  • While Jade Blend is cooking, peel and core pineapple. Cut pineapple into 1/2" thick pieces and grill both sides until well marked and slightly caramelized.
  • Dice grilled pineapple and mix with cilantro and jicama.
  • Once rice is cooked, add all remaining ingredients and mix well before serving.
